I’m baking 4 dozen muffins for a breakfast tomorrow (and my breakfasts throughout the rest of the week). Also making a cheesecake-like dessert (supposed to be better for you). And making a casserole for my lunches this week. I’ll be listening to Laura Ingalls Wilder’s Long Winter to help me feel like it’s baking day on the prairie.
